Oysters Rockefeller

Ingredients:

– Fresh oysters on the half shell
– Spinach
– Bread crumbs
– Parmesan cheese
– Butter
– Garlic, minced
– Herbs such as parsley or tarragon
– Salt and pepper
– Lemon wedges to serve

Instructions:

1. Preheat your oven’s broiler.
2. Shuck oysters and place them on a bed of coarse salt or crushed ice on an oven-proof tray.
3. In a pan, sauté garlic in butter, add spinach until wilted, herbs, salt, and pepper, and mix well.
4. Spoon the spinach mixture over each oyster, top with a mix of bread crumbs and grated Parmesan cheese.
5. Broil for about 5 minutes or until the topping is golden and bubbling.
6. Serve with lemon wedges on the side.
