Ingredients:
- 2 large eggs
- 2 thick slices of bacon
- 2 pork sausages
- 1 medium tomato, halved
- 1/2 cup canned baked beans in sauce
- 1 thick slice of bread (your choice of white, whole grain, etc.)
- 1 steak (about 6-8 ounces, like sirloin or ribeye)
- Freshly ground black pepper
- Salt to taste
- 1 tablespoon chopped fresh herbs (like parsley, chives, or a mix) for steak garnish
- Cooking oil or butter for frying
Instructions:
- Begin by seasoning the steak with salt and pepper. Let it sit at room temperature while you prep the rest of the ingredients.
- Heat a large skillet over medium-high heat and add the bacon. Cook until crispy, then remove and place on a paper towel to drain.
- In the same skillet, add the sausages. Cook, turning occasionally, until browned and cooked through. Remove and set aside with the bacon.
- Lower the heat to medium and place the tomato halves, cut side down, into the skillet. Cook without moving for about 3-4 minutes until they begin to char. Flip and cook for an additional 2 minutes. Remove and set aside.
- Pour the baked beans into a small pot and warm them over medium heat, stirring occasionally.
- Wipe the skillet if needed, and add a bit more oil or butter. Fry the eggs to your preferred doneness.
- For the steak, heat a separate pan over high heat until very hot. Add a touch of oil, then place the steak in. Cook for about 3-4 minutes on each side for medium-rare, depending on thickness (adjust timing for your preferred doneness). Let it rest for a few minutes, then slice and garnish with chopped herbs.
- While the steak is resting, toast the bread in a toaster or on a skillet until golden brown and crispy.
- Assemble everything on a plate. Season the eggs with a bit more salt and pepper.
