Honey Glazed Shrimp with Fresh Herbs

Ingredients:

12 large shrimp, peeled and deveined
2 tablespoons olive oil
Salt and freshly ground black pepper to taste
1 tablespoon honey
1 tablespoon soy sauce
1 clove garlic, minced
1 teaspoon fresh thyme, chopped
1 teaspoon fresh dill, chopped
Thinly sliced red onion, for garnish
Balsamic glaze for drizzling
A dollop of avocado puree for garnish (blend avocado with lime juice and a pinch of salt)

Instructions:

In a bowl, mix the honey, soy sauce, and minced garlic to create the glaze.
Heat the olive oil in a pan over medium-high heat.
Season the shrimp with salt and black pepper, and sear them in the pan until they start to turn pink, about 1-2 minutes on each side.
Lower the heat and add the honey-soy glaze to the pan, coating the shrimp well.
Cook for an additional minute or until the shrimp are caramelized and cooked through.
Remove from the heat and toss the shrimp with fresh thyme and dill.
On a plate, artistically drizzle some balsamic glaze.
Arrange the shrimp on the plate, garnish with sliced red onion and a dollop of avocado puree on the side.
