Caprese Skewers

These are simple yet classic Caprese salad skewers with a twist, including grilled chicken. A perfect appetizer for a gathering or a light summer meal! Here’s how you can prepare them:

Grilled Chicken Caprese Skewers:

Ingredients:

1 pound chicken breast, cut into 1-inch cubes
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon Italian seasoning
Salt and freshly ground black pepper to taste
1 pint cherry tomatoes (a mix of red and yellow adds visual appeal)
Fresh mozzarella balls (bocconcini)
Fresh basil leaves
Balsamic glaze for drizzling
Wooden skewers, soaked in water for 30 minutes to prevent burning

Instructions:

In a bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper.
Add the chicken cubes to the marinade and toss to coat. Let marinate for at least 30 minutes in the refrigerator.
Preheat your grill or grill pan to medium-high heat.
Thread a piece of chicken, a basil leaf (folded if large), a mozzarella ball, and a cherry tomato onto a skewer. Repeat until the skewer is filled.
Grill the skewers for 2-3 minutes on each side or until the chicken is cooked through and has nice grill marks.
Arrange the skewers on a platter and drizzle with balsamic glaze.
Optionally, sprinkle with additional fresh basil and season with a bit more salt and pepper before serving.
